Tasting notes

From Workshop Coffee

"Eduardo Anacona's Finca La Colorada sits at 1,700–1,900 masl in Íquira, Huila. The Pink Bourbon varietal on natural process produces warm raspberries and blackcurrant with a structured, clean finish that's unusual for a Colombian natural. Eduardo has been farming this plot for over 15 years; the Pink Bourbon trees were planted 8 years ago after he identified the varietal's performance at altitude."

Cuppd note

Workshop's Pinnacle range — of which La Colorada is a part — represents their top-tier sourcing: village-level geographic data, named producer, documented planting history. Most Colombian lots tell you the department and the varietal. Workshop tells you the farm, the municipality, the altitude range, and the producer's decision-making history.

Pink Bourbon natural is a different experience from Pink Bourbon washed (as in Dark Arts' Eternal Light). Where washed Pink Bourbon reads as floral and precise, natural Pink Bourbon front-loads the fruit — the raspberry and blackcurrant here are warm and full-bodied, not sharp. The "structured" note Workshop adds is important context: this is not a loose, overripe natural. Eduardo's processing is clean enough to let the varietal's inherent order show through.
