"Anoxic natural process from Izuba Community Washing Station in Kayanza Province. Expect notes of cola, cranberry, and lime — intense fruit-forward character with a clean, structured finish typical of high-altitude Burundian Red Bourbon. The water pillow anoxic process creates a controlled oxygen-free environment during fermentation, amplifying the fruit complexity without risking over-fermentation."

Cuppd note

The anoxic water pillow process — sometimes called "underwater natural" — submerges the whole cherry in sealed tanks filled with water and CO2, displacing all oxygen. The result is a fermentation environment that's more controlled than a standard anaerobic tank and more extreme than a standard natural drying bed. Kayanza Province in northwestern Burundi is one of the better-defined specialty growing zones in the country.
