About Special Guests Coffee
Special Guests Coffee is a Marylebone specialty coffee roaster founded in 2022 by Paul Ross, two-time UK Barista Champion (2019 and 2020). Operating from 8 Aybrook Street, their cafe runs a pourover bar with 10–12 single origin filter coffees available at any given time, priced from £6 to £30 a cup. The focus is rare micro-lots and competition-grade beans — coffees that are otherwise inaccessible to most consumers.
Paul Ross spent years at the top of the UK competition scene before opening Special Guests: two UK Barista Championship wins (2019, 2020), the UK Coffee in Good Spirits Championship (2017), and positions at Origin Coffee, Kiss the Hippo, and Watch House. The roastery roasts every Tuesday and focuses on sourcing the lots that serious baristas want access to. A monthly 100g subscription puts those lots in front of subscribers before they're offered publicly. The frozen coffee archive preserves the best examples rather than letting them go when the bags run out. Substance in Paris — widely regarded as one of the world's best specialty cafes — has endorsed the sourcing quality.
For Cuppd users at the enthusiast end of the taste profile, the monthly 100g subscription is the most direct route to the rarest coffees in the London market. Start with the pourover bar to calibrate before committing. Having 10–12 single origins simultaneously lets you work through the range on a single visit in a way that would otherwise require ordering 12 separate bags online.
Roaster profile
Special Guests operate at the expensive and rare end of London's specialty spectrum, which makes them either immediately relevant or irrelevant depending on where you are in your coffee journey. If you want to understand what competition-grade coffee actually tastes like outside a competition — if you want access to the varietals and processing experiments that baristas spend years sourcing — then Special Guests is doing this in a way that no other London roaster currently replicates.
The frozen coffee archive is the most distinctive aspect of the operation. Most specialty roasters treat an outstanding lot as a moment: it arrives, it sells out, it's referenced in past tense. Ross preserves the best examples rather than letting them go when the bags run out, which means the conversation about a specific coffee can continue over time.
The pourover bar at 8 Aybrook Street is the operational expression of the sourcing philosophy. Having 10–12 single origins available simultaneously — ranging from £6 to £30 a cup — lets the drinker work through the range on a single visit in a way that would otherwise require ordering 12 separate bags online. At the upper end of that price range, you're drinking coffees that most consumers never access.
The Substance Paris endorsement deserves a note. Substance is consistently listed among the world's best specialty coffee establishments, and an endorsement from their team is one of the harder external signals to dismiss — it's a serious specialty operation saying the coffee quality is real.
For Cuppd users at the enthusiast end of the taste profile, the monthly 100g subscription is the most direct route to the rarest coffees in the London market. Start with the pourover bar first to calibrate before committing.
